Where’s the Beef: Lazy Lasagna
Looking for an easy meal during the cold months that’s quick and full of flavour? This one is our favourite! And no, we will not include our life story before we provide you with the recipe, ha ha!
Ingredients:
1 tbsp oil
1/2 a large onion, diced
3 cloves of garlic or 2 tbsp of minced garlic
1 lb of ground beef
1 tbsp of oregano
Salt and pepper to taste
1 jar of pasta sauce
500 g of pasta (we prefer mafalda noodles, but you can use broken lasagna)
1 cup of shredded mozzarella
1 cup of ricotta cheese
Several leaves of basil thinly sliced
Steps:
In a large pot, cook the onions and garlic in the oil on medium heat until the onions are translucent.
Add the beef and season with salt, pepper and the oregano. Cook the beef until browned.
Add in the pasta sauce to the beef and mix.
Add the pasta on top of the sauce, and add water until the water is the same height as the pasta. Push down any noodles to ensure they are submerged.
Place the lid on the pot and simmer until the noodles are cooked.
Stir in the mozzarella, ricotta and basil.
